Good Morning you all here from beautiful Colorado Springs, CO. In a earlier post I mentioned a “fools” spring…well here you have it again. We started out with some rain this morning, a welcome event due to the fact we could all use the moisture and then BAM, snow. Huge flakes coming straight down. It’s been predicted that we might get over a foot…WE hear at Jimmy Dicks say BRING IT. We live in Colorado after all, we love all 4 seasons, even if its all in one day, lol.
So on this crazy weather day, Jimmy Dicks made us a fabulous Breakfast Casserole for 2, now I say for 2, but really it would feed 4. Since it’s just Jimmy Dick and I in the house right now, empty nesters, if you want to make this for your family, you could just double it up. This is super easy and super fast. It always amazes me what Jimmy Dick can pull together for us out of our freezer and fridge. You may also have everything you need to make this. I can’t wait to have seconds in an hour or two…again, we did have left overs…lol
