Happy Easter from Jimmy Dick (Ham & Scalloped Potatoes)
Cheesy Scalloped Potatoes, so Good
Ingredients:
2 Cups of shredded Smoked Gouda Cheese
2 Cups Cheddar Cheese
6 Potatoes peeled and sliced thin
½ Onion cut in half. Thinly slice the half of the onion
3 Cups of Half and Half, or Milk
¼ Cup All Purpose Four
¼ Cup Butter
1 tsp Seasoned Salt, Black Pepper, Salt, and Onion Powder
Let’s Prep:
Peel and slice Potatoes and ½ of ½ of onion. Set onion aside but place sliced potatoes into a large bowl of water to keep from browning. Next measure out the spices and set aside.
Let’s Cook:
In a large pan melt butter then add flour to create a roux. Stir constantly for about a minute to get rid of the raw flour flavor. Add Half and half or milk and spices. Stir constantly smoothing out any lumps from the roux. Once it starts to thicken add cheese and keep stirring until melted and smooth. In a 9X13 pan spray with nonstick cooking spray and then put a few onions down on the bottom to create space for the sauce to get between the potato and pan bottom. Layer potatoes on bottom of pan with another light layer of onion. Sprinkle with addition salt and pepper then repeat until you run out ingredients or room in the pan. Pour cheese sauce over potatoes and using a spatula smooth out and poke around to let the sauce reach the bottom. Cover in foil and bake for 30 minutes at 375 degrees. Remove foil and continue to bake for an additional 30 to 45 minutes until bubbly and the top browns.
These potatoes are so good for any occasion.
Easter Ham
This is the easiest ham you will ever make. All you have to do is prepare a simple sweet glaze and bake that ham and you are done. Total Cook time is 90 min.
Let’s Prep:
Remove ham from packaging and give it a good rinse, then place it in the pan you plan on cooking it in and leave on the counter a good hour before baking to bring it up to room temperature. Pre-heat the oven to 350 degrees, then bake ham for 30 min.
Let’s Cook:
While the ham is baking make the glaze.
Glaze Ingredients:
1 stick of butter
2 Cups Brown Sugar
8oz of Honey
A dash of Cinnamon, All Spice and Nutmeg.
In a sauce pan combine all ingredients for the glaze and mix well. Cook over medium heat until it is well combined, melted and smooth. Turn off heat. After 30 minutes remove Ham from the oven and glaze using a brush. You have two more glazes to go so don’t use it all up in the first glazing. Bake ham for another 30 minutes. Glaze ham again and bake it for another 30 minutes. Remove and let cool before cutting. Once you cut your ham feel free to very lightly glazed sliced ham then cover in foil to be keep warm.
